Do i still stand a chance in the eyes of a college admissions officer?

I think that you should be fine. Your SAT is low for them, but high for many many other schools. Do you have a first choice? Also, you should just apply to a few schools you KNOW you will be accepted too. You have a lot of great extracurriculars, and a really great GPA. They may look at your SAT and wonder if you beat the system all through high school, but honestly I doubt it. Don't worry to much, because you sound like an all around great person, and I would be very surprised if you didn't get in anywhere (esp. the schools on your list.) SAT's are just one part of the application, and I think that you have outweighed them with everything else. Just don't slack, you'll be fine.
